Walnut Fudge Pie: from Cabaret Dessert Queen Shelly Laws
Single Pie Crust (not pre cooked)
1 C flour
1/2 tea salt
4 Tbl Cold butter
2 Tbl Shortening
(makes a single crust. You can use all shortening if you wish. I am just trying to get away from the trans fats a bit)
Pie filling
3 eggs
1 c light corn syrup
1/8 tea Salt
1 tea vanilla
1 c light brown sugar (packed to measure)
2 tab Butter
2 squares (2oz) unsweetened Chocolate (melted)
1 c walnuts chopped (or halves if you want the fancy look)
1/2 cup heavy cream for whipping
Oven 400
Beat eggs slightly and add corn syrup, salt, brown sugar vanilla and melted butter. mix well. stir in melted chocolate, and fold in nuts. pour into pie shell
Bake at 400 for 15 min reduce heat to 350 and cook for another 30 to 35 min. cool and decorate with whipped cream to serve.
On a side note Egg whites freeze well and 1 egg white is just right in a ice cube tray. I freeze them up then put them in a freezer container so I can pull out one egg white at a time as I need them.
